White tea comes from Camellia sinensis, the same plant that produces black and green tea. The differences between the types of tea are mainly the maturity and the amount of oxidation of the leaves. White tea is made from new growth buds and very young leaves, and it is the least oxidized type of tea. Typically, white tea brews a pale, golden color with a much more delicate flavor than either green or black tea. Popular varieties of white tea include Silver Needle (Bai Hao Yinzhen) and White Peony (Bai Mu Dan), grown in China; Ceylon White, grown in Sri Lanka; and Darjeeling White, grown in Northern India.
